Reporting to the Culinary Director, this role will drivecreative direction, operational excellence and a high-performing team within a premium, large-scale hospitality environment.

About the Role

  • Lead and inspire large pastry teams, building capability, driving performance and fostering a strong and inclusive culture
  • Championinnovation and creativity, developing contemporary pastry offerings aligned to market trends and guest expectations
  • Embed and uphold industry best practice, including HACCP, food safety, and operational excellence frameworks
  • Oversee end-to-end pastry operations, ensuring consistency in quality, presentation and production across multiple outlets
  • Drive commercial outcomes, managing labour, food costs, and productivity to deliver strong financial performance

About You

  • Proven senior leadership experience in premium, high-volume hospitality environments, leading a large and diverse team
  • Highly creative pastry professional with a passion for innovation and staying ahead of industry trends
  • Strong commercial acumen with demonstrated experience managing budgets, P&L and operational performance
  • Deep understanding of food safety, HACCP and compliance, with a commitment to best practice standards
  • Trade-qualified Pastry Chef (Diploma or higher preferred) with exceptional attention to detail and organisational capability
